Orange Mashed Cauliflower for October

Have you ever tried mashed cauliflower? How about orange mashed cauliflower? No food coloring here, just old-fashioned real food! Easy and delicious, mashed cauliflower is a great substitute for mashed potatoes. Perfect for people on the GAPS diet or those looking to reduce their starch intake in general.

You only need three ingredients! Well, four if you are going to make it orange for October! A wonderful side for your trick-or-treat dinner plans.

Mashed Cauliflower Recipe

  • 1 head of cauliflower
  • 1/2 cup of butter, coconut milk, or coconut oil (your choice!)
  • Sea salt to taste

Orange Mashed Cauliflower Recipe

  • 1 head of cauliflower
  • 3-4 large carrots or 7-8 small carrots
  • 1/2 cup of butter, coconut milk, or coconut oil (your choice!)
  • Sea salt to taste

1. Cut the head of cauliflower (and carrots if you desire orange color!) into small chunks with a knife. Keep the green leaves. They add extra fiber and it doesn’t taste any different.

2. Place in a pan and pour approximately ½ inch of water in the bottom.

cauliflower in pan uncooked3. Turn on medium heat on the stove top and steam the cauliflower (and carrots) until tender, usually 15-20 minutes.

4. Pour off the extra water.

5. Place the cooked cauliflower (and carrots) in a heat-resistant blender or mixer.

cauliflower carrots cooked 16. Add a 1/2 cup of butter, coconut milk, or coconut oil. Add more if you’d like. Use a generous helping! (I used oil in these photos.)

Yummy!! I’ve discovered that both kids and adults love mashed cauliflower. It’s especially delicious served with meatloaf.  Serving it mashed is also a great way to get kids to eat more vegetables.

Notes
Mashed cauliflower is especially delicious with meatloaf. Serving it orange is also a great way to get kids to eat more vegetables, and fun for Halloween activities.
