In June, I posted a new recipe during rhubarb season, Paleo Raspberry Rhubarb Muffins. Delicious! It was a big hit with my readers. I enjoyed baking them a couple more times over the summer. However, I also discovered that when I was craving these grain-free muffins, I didn’t have rhubarb. Who wants to run to the grocery store for one item? I’m not a big fan of grocery store shopping. I love my CSA and the farmers market, but big chain stores, not so much. So, I wasn’t about to make the trip.

What to do? Just substitute another fruit! How about pear?

Another success! My Paleo Raspberry Pear Muffins are just as tasty. It’s fun to experiment with different fruit combinations. I bet these muffins would be scrumptious with apple or blueberries as well. What shall I try next? :)

In the meantime, enjoy a new muffin recipe on me. Once again, these muffins are safe and permissible for anyone on a grain-free, Paleo, SCD, or GAPS program. Plus, they are super easy to make!

Paleo Raspberry Pear Muffins

Batter mix before baking.

Ingredients

  • 1/4 cup coconut oil
  • 1/4 cup of honey
  • 6 eggs
  • 2 teaspoons vanilla
  • 1/2 cup coconut flour
  • 1/8 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 – 1/2 teaspoon nutmeg (or cinnamon)
  • 1 cup finely chopped raspberries
  • 1 cup finely chopped pear

Directions

  1. Preheat oven to 350 degrees.
  2. Melt coconut oil and honey in preheating oven.
  3. Chop the raspberries and pear and set aside.
  4. In a large bowl, mix eggs and vanilla. Stir in coconut oil and honey when liquid.
  5. In a small bowl, mix coconut flour, baking soda, salt, and nutmeg together.
  6. Add dry ingredients to the wet ingredients and mix until well combined.
  7. Gently fold in pear and raspberries.
  8. Use paper liners or coconut oil to coat your muffin pan and pour in batter.
  9. Bake for 20-25 minutes. Set on cooling rack.
  10. Serve muffins with organic butter or enjoy plain!

  1. You know, I’ve gotta admit, I’ve never used coconut flour before…I think I’m going to have to change that soon! :)

      Coconut flour is fairly easy to work with, as long as you like eggs. :) Every recipe I’ve seen uses a lot of eggs. Let me know if you give it a try and like it.
